Quick and easy snacks you can have on the go!


Protein Cacao Balls with Apricot and Pistachios

I like to make these up on a Sunday and keep them in the fridge for the week (they don't usually last that long in my house :D)




Ingredients:

2 Cups Chopped dried apricots

1/2 Cup Chopped pistachios

1/4 Cup raw cacao powder

1/2 Cup rolled oats

1/4 Cup Vegan Protein Powder (I use vanilla or chocolate, depending on what I have at the time!)

2 Tbsp extra virgin olive oil

Desiccated coconut to cover

Instructions:

1. Soak the dried apricots in hot water for approx 15mins to help soften them.

2. Add all ingredients in a food processor and blend until well mixed.

3. Shape the mixture into balls (about 2Tbsp of mixture per ball), and roll through desiccated coconut to coat them.

4. Put in the fridge to firm (in an air-tight container).

Makes approx 24 protein balls.
